Warm Prawn Salad
This is quick and easy to prepare. Frozen prawns can be used.
Ingredients
250 grams of peeled raw prawns
2 tablespoons pesto sauce (46 grams)
2 bunches of trimmed asparagus (200 grams)
8 cherry tomatoes (120 grams)
3 cups Mesculn lettuce (150 grams)
Method
Stir-fry prawns in pesto sauce until just pink.
Let rest for 5 minutes.
Steam asparagus for 5 minutes, blanch in cold water and chop into bite size pieces.
Cut tomatoes in halves.
Place half of lettuce in a bowl.
Top with tomatoes, and asparagus and finely cooked warmed prawns.
Serve immediately.

Variations
Any seafood could be used or lightly cooked strips of tenderloin chicken.
Tips
Pesto sauce made with an unsaturated oil such as olive will help to make this an healthy recipe. Prawns are moderately high in cholesterol. Use scallops or a firm fresh fish if cholesterol is problem.
