Eggless Chocolate Cake
Good for egg allergies.
Ingredients
1-½ cups plain sifted white flour (195 grams)
1 cup dark brown sugar (165 grams)
¼ cup cocoa powder (30 grams)
1 teaspoon bicarbonate of soda (2.5 grams)
4 tablespoons unsaturated oil (85 ml)
1 tablespoon vinegar (20 ml)
2 teaspoons vanilla (10 ml)
1 cup low fat milk (250 ml)
1 cup dark chocolate chips (150 grams)
Method
Mix flour, brown sugar, cocoa and bicarbonate of soda together in a bowl.
Add oil, vinegar, vanilla and low fat milk.
Into a 20 cm square baking tin lined with baking paper.
Sprinkle with chocolate chips.
Bake in 180ºC oven for 40 minutes or until risen and skewer comes out clean.
Let cool in pan.
Cut into 20 pieces and serve.

Variations
For a lower fat cake, omit the chocolate chips.
Tips
This freezes well. Cut into 20 pieces and freeze so individual pieces may be removed.
