Baba Ghanoush
Use it for a festive occasion.
Ingredients
1 medium eggplant (400grams)
Spray oil
3 tabsp sesame seeds (54grams)
2 tabsp lemon juice (40ml)
1 clove garlic (3grams)
Salt and pepper to taste
¼ teaspoon cumin
Method
Cut eggplant in half, spray with oil and place cut side down on a greased baking sheet.
Bake in 200?C oven for 40 minutes or until soft.
Remove and allow to cool for 5 minutes.
Scoop out the flesh into a strainer and allow moisture to drain for 15 minutes.
Place in a blender with sesame seeds, lemon juice and garlic.
Blend until smooth.
Season to taste with salt, pepper and cumin.
Let flavours blend in the refrigerator for 2 hours or more. Better the second day.
Cut Pita bread into wedges and warm in 150?oven for 10 minutes.
Serve as a dip.
Low in fat and delicious.
