Lamb Souvlaki Wraps
500 grams lean lamb strips
3 tabsp lemon juice (60 ml)
1 teaspoon olive oil (5 grams)
2 tabsp chopped fresh herbs- e.g.- oregano, basil and thyme
2 finely chopped cloves garlic (6 grams)
4 pita wraps (gluten free if required)(220grams)
½ finely sliced Spanish onion (75 grams)
1 finely sliced Roma tomato (100 grams)
60 grams low fat finely cubed feta
1 cup shredded lettuce (75 grams)
Marinate lamb strips for 30 minutes in lemon juice, oil, herbs and garlic.
Grill lamb for 5 minutes or until no longer pink.
Heat 4 wraps in microwave for 1 minute.
Divide lamb between wraps and top with Spanish onion, sliced tomato, feta and lettuce.
Roll up firmly, wrap with a strip of greaseproof paper and tie with string.
Place on a plate and serve with additional salad if desired.

This can be cooked on the barbecue or inside on a grill. If more convenient, heat wraps on barbecue plate.
