Matrimonial Date Cake
Ingredients
Filling
50 medium pitted dates (250 grams)
½ cup water (125ml)
2 tabsp lemon or lime juice (20ml)
¼ cup sugar (55grams)
Heat dates, water, lemon juice and sugar gently in a bowl in microwave until soft. Mix to a paste with a fork. Put aside to cool.
Oatmeal mixture
1cup plain whole meal flour (130grams)
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
1cup quick cooking oatmeal (90grams)
½ cup brown sugar (80grams)
½ cup unsaturated margarine (125grams)
Method
Mix flour, baking powder and bicarbonate of soda, oatmeal and brown sugar together.
Rub in margarine to form a coarse meal.
Divide mixture in half.
Line a 27 by 18 cm lamington size tin lined with baking paper.
Spread ½ of the oatmeal mixture in the bottom and press down firmly.
Spread cooled date mixture over the oatmeal mixture.
Top with remaining oatmeal mixture, pressing down very gently.
Bake in 180?C oven for 30 to 35 minutes or until lightly brown.
Allow to cool in tin.
Cut into 30 pieces.
