Green and Yellow Mash
This is ideal to serve with a chicken or meat casserole
2 cups peeled sweet potato (280grams)
1 ½ cups peeled pumpkin (180grams)
1cup cooked chopped spinach (145grams)
2 crushed cloves garlic (6grams)
Salt and pepper to taste
Cook sweet potato and pumpkin in microwave or steam for 12 to 14 minutes.
Drain any liquid and then mash and whip until fluffy.
Steam or microwave well washed spinach with garlic and then coarsely chop.
Fold into potato pumpkin mixture and season to taste with salt and pepper.
