Peppermint Watermelon

Serve on it’s own as a refreshing end to a Barbecue

Ingredients

4 cups water melon (660 grams)
¼ cup sugar (55 grams)
1 tabsp finely chopped fresh peppermint
2 tabsp boiling water (40 ml)
2 tabsp lemon or lime juice (40 ml)

Method

Remove seeds and cube about ¼ watermelon to yield 4 cups.
Place in bowl.
Mix sugar, fresh chopped peppermint, boiling water and lemon juice together.
Pour over watermelon and leave to marinate for 1 hour.

Serves : 6

Note

Fresh peppermint is worth including in your herb garden. Once you have a sprig, place in water and it will root. Share a small pot with friends and you will always have it. Chop and make peppermint tea or use with watermelon or other melons. May be added as well to any mixed fruit salad. If not available, use regular mint and add a couple of drops of peppermint essence.
