Open sandwiches
For afternoon tea or supper, allow 2 to 3 per person
Ingredients
French Stick
• Cut French sticks into 2 cm diagonal slices.
Base Spreads
• Labneh yoghurt cheese (5% fat)
• Cottage cheese 93 to 5%)
• Low fat mayonnaise (3 % Fat)
• Grained mustard (no significant fat)
• Low fat creamed cheese (17% fat)
• Avocado (22% fat)
• Horseradish (no significant fat)
Toppings
• Lettuces
• Sliced hard cooked egg
• Smoked Salmon
• Lean shaved ham (3% fat)
• Tinned red salmon
• Chopped hard cooked egg with low fat mayonnaise
• Sliced hard cooked egg
• Lean shaved roast beef
• Thinly sliced Lebanese cucumbers
• Thinly sliced tomatoes
• Swiss cheese
• Fresh sliced mushrooms
Garnish
• Slices of avocado
• Pickled asparagus
• ½ cherry tomato
• Olives stuffed
• Bread and butter pickles
• Semi sun-dried tomatoes
• Sweet Gherkin
• Capers
• Parsley
• Basil
Method
Put all the possible ingredients out on the counter and then just keep doing different combinations until you have enough.
• Cut French sticks into 2 cm diagonal slices.
• Spread bread with base of your choice. It is good to use 2 or 3 different ones to give maximum variety in flavour.
• Top with any combination or use some of the suggested ones.
• Follow with an appropriate garnish.
Examples
Labneh cheese, fancy lettuce topped with smoked salmon and capers.
Mustard, slice of shaved ham, slices Lebanese cucumber and Semi Sun-dried tomatoes.
Ricotta cheese, Horse Radish sauce, lettuce, lean roast beef and Bread and Butter pickles.
Low fat creamed cheese, Lettuce, sliced tomato and sliced avocado with Basil.
Mashed avocado, chopped egg with low fat mayonnaise and sliced stuffed olives.
Cottage cheese, Tinned salmon, sliced mushrooms and pickled asparagus.
Horse Radish, lean roast beef, sliced egg and ½ cherry tomato and parsley.
Low fat mayonnaise, Swiss cheese, sliced avocado and sweet gherkin.
