Peeled Capsicum
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
Capsicum (red, green or yellow) (200grams)
Method
· Cut capsicum in quarters, remove seeds and flatten.
· Place flesh side down under a hot grill.
· Grill for about 10 minutes or until skin is black and charred.
· Place in a plastic bag and leave to sweat for 10 minutes.
· Remove capsicum and peel off skin with fingers. It usually comes away quite easily.
· Use in salads or recipes as called for.
· May be kept by placing in olive oil, garlic and herbs in the refrigerator.
