Potato-Sweet Potato mash
Ingredients
3 medium peeled and cubed potatoes (300grams)
1 large peeled and cubed sweet potato (300grams)
2 medium well washed and finely sliced leek (200grams)
4 finely chopped cloves garlic (9grams)
2 teaspoon unsaturated margarine (10grams)
1 tabsp water (20grams)
Salt and pepper to taste
Method
Steam or microwave potatoes until soft.
Stir-fry leek and garlic with margarine and water in a non-stick pan until golden.
Mash and then whip all the potatoes using a hand electric beater until smooth.
Fold in the leek and garlic and season to taste with salt and pepper.
Place a scoop on the plate and top with lean French lamb cutlets, poached salmon or lentil patties.
