Low fat fibre pastry
Recipe from "Living in the 21st Century with Diabetes"
Ingredients
1 Cup of wholemeal flour (140grams)
2 tabsp firm mono/polyunsaturated margarine (40grams)
2 tabsp ricotta cheese
1/4 cup iced water (65ml)
Method
* Measure flour and place in a bowl
* Cut firm margarine into flour until the size of peas
* Stir in ricotta cheese
* Stir water into dry parts of pastry until it sticks together
* Make into a firm ball, knead and roll to required size
