Beef Curry
Recipe from Living in the 21st Century with Diabetes
Ingredients
1 medium finely chopped onion (100grams)
3 cloves of garlic (9grams)
2cm piece of green ginger (10grams)
1 tsp ground cumin
2 tabsp beef curry powder (20grams)
½ tsp chilli powder (optional)
1 tsp turmeric
1 tabsp mono/polyunsaturated oil (20ml)
Lean cubed blade or round steak (500grams)
1 tsp Lite salt (5grams)
1 medium tomato (100grams)
1 large potato (200grams)
Method
· Saute onion, garlic, ginger, cumin, curry powder, chilli powder and turmeric with oil in pan.
· Cook and stir for 3 to 4 minutes until a curry paste has formed.
· Add cubed steak and salt. Cover and cook on low heat for 10 minutes.
· Add tomato and potato and continue to cook until soft and tender.

Note
Salt does draw out moisture. You may use regular salt as an alternative which will increase the sodium.
