Honey Bread Pudding
Ingredients
2 tsp mono/polyunsaturated margarine (10grams)
4 slices wholemeal bread (gluten free if required)(100grams)
2 eggs or low cholesterol egg mix (100grams)
3 cups non-fat milk (750ml)
2 tabsp honey (36grams)
1/4 cup sultanas (40grams)
Rind of 1 lemon
Method
Spread margarine very thinly on bread and cut into cubes.
Beat eggs, warm milk and honey together.
Place bread in a greased casserole dish.
Sprinkle sultanas and grated lemon rind on top.
Pour over milk mixture.
Cover and bake in 1800C oven for 1/2 hour.
Remove lid and bake for further 1/2 hour or until a knife comes out clean.
