Cheese Sultana Slice
Ingredients
Pastry Base
3/4 cup quick cooking oatmeal (70 grams)
3/4 cup wholemeal plain flour (95 grams)
1/4 cup unsaturated margarine (60 grams)
1 tabsp sugar (18 grams)
1/4 teasp bicarbonate of soda
2 tabsp water (40 ml)
Filling
500 grams Quark continental 10% fat cheese
3 eggs (150 grams)
Rind of 1 lemon
1/2 cup castor sugar (110 grams)
1/2 cup sultanas (85 grams)
Method
· Mix oatmeal, flour and sugar together.
· Cut or rub in margarine until a mealy texture is reached.
· Mix bicabonate of soda with water.
· Stir into pastry mixture.
· Form into a ball and then lightly kneed on a floured surface.
· Roll between two sheets of baking paper to fit a 30 by 20 cm baking tin (lamington size)
· Transfer to tin and ease pastry to fit the bottom with your hands.
· Bake in 200°C oven for 10 minutes.
· In the mean time beat, cheese, eggs, lemon rind, sugar and sultanas together.
· Pour into baked pastry base, reduce heat to 180°C and bake for a further 20 to 25 minutes or until puffed and set. Don’t over bake or the cheese mixture will become grainy.
