Diabetic Fruit Pudding
This has no added sugar and Uses dried fruit to give sweetness
Ingredients
18 finely chopped dates (100 grams)
1/2 cup finely chopped raisins (100 grams)
1/3 cup finely chopped walnuts (30 grams)
1/2 cup boiling water (125 ml)
100 grams unsaturated margarine
1 1/4 cups self raising wholemeal flour (150 grams)
1/4 teasp baking powder
1/2 teasp mixed spice
Method
Roughly chop date, raisins and walnuts in a food processor.
Place in a bowl and add boiling water.
Blend in margarine.
Fold in flour, baking powder and mixed spice.
Grease a pudding basin or line with baking paper.
Add pudding mixture and cover with baking paper.
Tie with string or use a rubber band.
Place in a saucepan of boiling water.
Gently boil for 1 hour.
Serve with custard sauce.
