Bread Custard
A recipe from the book “Ye Old Bread Custard”.
Ingredients
6 slices of white or fruit bread (gluten free if required)(180grams)
2 teaspoon margarine (10grams)
3/4 cup sultanas (110grams)
2 cups low fat milk (500ml)
2 eggs (100grams)
1/4 cup sugar (48grams)
Nutmeg
Rind of 1 lemon
Utensils
Knife
Oven Proof dish
Bowl
Mixing spoon
Oven
Non-stick cooking spray
Egg whisk
Method
Turn oven to 180°C.
Cut crusts off bread and spread margarine lightly on each side.
Cut bread into fingers (strips).
Lightly spray ovenproof dish and place a layer of bread on the bottom.
Sprinkle with sultanas, and place a layer of bread on the top.
Use a whisk to beat milk, eggs and sugar together in a bowl.
Pour gently over bread. Allow to stand for 30 minutes and then sprinkle with nutmeg and lemon rind.
Bake on middle oven shelf for 40 to 50 minutes or until top is golden brown and custard has set.
