Mother's Day
Going out for mother’s day is great but the restaurants are busy and if the weather is nice a picnic in a park or a nice meal at home that mum doesn’t need to prepare may be even better. If you are a mum, give this to your family and leave it up to them.
PICNIC IN THE PARK OR ON THE PATIO.

Chicken and Salad Roll-ups
Fresh fruit Yoghurt Dip
Chocolate Almond Wafers
Fruit Juice, Coffee, Tea
Shopping
Cooked chicken, mixed greens, ice berg lettuce, cherry tomatoes, Lebanese cucumber, red onion, reduced fat feta, olives, red capsicum (optional- avocado, carrot, beetroot), mountain bread or Lavash bread, Hommos, fresh fruit, vanilla yoghurt, make Chocolate Almond Wafers as per recipe or purchase chocolate. Drinks- as desire but think of coffee, tea, milk, sugar (if required) and fruit juice.
Equipment and Utensils.
Have on hand or purchase disposable glasses or cups, napkins and paper plates, tablecloth, bowl for yoghurt, knife and spoons, tongs and thermos for hot water. Have cooler for transport of perishable items.
ROLL-UPS
Section cooked chickens removing skin to keep fat down.
Salad
Toss mixed greens and well-washed iceberg (everyday) lettuce with cherry tomatoes, sliced Lebanese cucumber (they are the small ones) and peeled and sliced red onion. Garnish Salad with reduced fat feta and a few Kalamata or other olives and red capsicum cut into strips. Vary content according to likes and dislikes and vegetables on hand. You may add avocado, grated carrot or beetroot (try the canned shredded one but serve on top, don’t mix it in or everything will go red!)
Have a packet of Mountain or Lavash bread and a small tub of Hommus on hand.
Dessert
Prepare a container of mixed fruit that is washed and cut-up. Try grapes, new season apples and rock melon or watermelon. Add a little lemon juice to apple to prevent it going brown. Take a container of vanilla yoghurt with serving spoon and bowl to serve as a dip.
AT THE PICNIC OR ON THE PATIO.
Place containers of chicken, salad, Hommus and the bread on a cloth on a rug or table.
Have paper plates, napkins, tongs and small knife.
Let everyone make his or her own roll-up.
Spread bread with Hommus, top with chicken and finally with salad.
Roll up and serve.
Dessert
Place container of fresh fruit on cloth and scoop yoghurt into a bowl and allow the family to dip fruit into yoghurt.
If children or family members can manage, a delightful finish would be Chocolate Almond Wafers otherwise as it is a special day a little chocolate with coffee or tea and juice.
Remember to transport perishables such as chicken in a cooler.
