Gelatine Leaf
2 leaves of gelatine equals 1 tsp of powdered gelatine. Leaf gelatine is dissolved in cold water and then added to the hot product or heated gently until dissolved. It gives a much clearer mixture than powdered gelatine so is ideal in aspics and jellies where appearance is critical. Available in gourmet stores in packages of 12 leaves. It keeps well.
