'There is Nothing to Eat in this House'
This is one of my pet hates, when my husband stands at the fridge with the door open and says there is nothing to eat in this house, what am I going to have for lunch? As a professional athlete, a sandwich is never enough, and if I am not home to stop him, lunch usually ends up being a packet of 2 minute noodles with an egg cracked on top! I am sure you can all relate, but what do you do in this situation?
The best advice I can give for this dilemma is to always be prepared. My Mum has the most prepared kitchen you will ever see. She always has two of EVERYTHING, just in case. You dont need to go to this extent, but having some good staples always at the ready will prevent unhealthy lunches or last minute dinners such as 2 minute noodles, eggs on toast or tinned spaghetti. It may also save you a few dollars on takeaways when you cant be bothered going to the supermarket on the way home and also save you the kilojoules!
Here is a list of things I always have on hand, for these situations;
A cheap frozen vegetable mix
Frozen fish fillets or microwave fish pouches (not crumbed)
Frozen chicken breasts, wrapped individually
2minute microwave rice
Packet noodles (egg noodles, rice noodles, hokkein noodles)
Soy sauce and sweet chili sauce
Pesto
Cans of beans (Chickpeas, 4 bean mix)
Canned tuna
Mixed nuts
A jar of tomato based pasta sauce
Quick cook pasta
Just looking at this list I can see about ten different meals that I could whip up in about 20mins. Here a just a few;
Egg noodles with diced chicken, vegetables and soy sauce/sweet chili
Frozen fish fillets with a side of vegetables
Stir fried diced chicken, cooled, combined with chickpeas and pesto
Canned tuna and 4 bean mix salad
Chicken and chopped nuts stir fried with vegetables and served with rice
Chicken pasta with tomato based sauce or a teaspoon of pesto mixed through
I never fail to amaze my husband when I serve him up something from nothing. Its always delicious and always in about 20mins.
