Capsicum
Capsicum can be very difficult to digest. If it is grilled until black and then peeled it is much easier. It will keep for about 10 days if put in oil in the refrigerator. To peel capsicum, wash, seed, quarter and flatten capsicum. Place skin side up on hot grill. Grill until black. Place in a plastic bag to sweat for 5 minutes. It is then easy to peel with the fingers. If you wish to keep in the refrigerator, place in a container and cover with a little olive oil for up to 1 week. Before use, lay it on a paper towel to rid of excess oil.
